St. Dalfour Apricot Hot Cross Buns

INGREDIENTS
¾ cup milk, warmed
¼ cup caster sugar
1 ½ TSP yeast
2 ¼ cups high grade flour
1 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground mixed spice
½ tsp salt
1 egg, beaten
30g unsalted Butter, softened
Zest of 1 orange
2 tsp St Dalfour Apricot Fruit Spread
2 tsp water
Filling
450g cream cheese
Glaze
½ cup St Dalfour Apricot Fruit Spread
Topping
2 tbsp finely chopped Pistachios
INSTRUCTIONS
- Whisk together milk, 1 tsp caster sugar, and yeast until well combined in the bowl of a stand mixer. Rest for 5 minutes or until foamy.
- Add the flour, cinnamon, nutmeg, mixed spice, salt, remaining sugar, egg, butter, and orange zest. Mix on low speed with a dough hook attachment until a dough begins to form.
- Increase to a high speed and knead for 5 minutes or until smooth. Transfer to a greased bowl, cover, and set aside in a warm place for 1 hour or until doubled in size.
- Punch down the dough and divide into 12. Roll into balls and place evenly spaced apart on a greased baking tray. Cover and set aside for a further 40-60 minutes or until doubled in size.
- Preheat the oven to 160°C.
- Mix together apricot spread and water, then brush over the buns. Bake for 15-20 minutes or until golden brown. Set aside to cool.
- Cut a cross three-quarters of the way through each bun.
- To prepare the filling, mix the cream cheese until smooth and transfer to a piping bag. Pipe the cream cheese into each bun to make a cross.
- To make the glaze: Melt apricot spread. Dip the top and sides of each bun into the apricot spread to glaze, then place on a lined baking tray.
- Sprinkle pistachios over the cream cheese crosses and place in the oven to bake at 200°C for 10 minutes or until the spread begins to bubble.
- Set aside for 5 minutes, then serve and enjoy.
